As one of the editors of We Eat A lot, I work in NJ’s largest city, Newark. The office is located right outside Penn Station Newark so there are many options for lunch. One of the options is a small ramen shop called Fukuyama which is about a 10 minute walk from Penn Station at 55 Bleeker St, Newark, NJ about 100 feet from Rutgers University, Newark. The location is small and many times there is a line to order and a line for tables. But the food is worth the wait.
Definitely try the Miso Ramen. The broth is slightly salty and hardy. The ramen noodles are chewy but not underdone and the pieces of braised pork that are added are like the icing on the cake. They are tender and flavorful. If you want to authenticate the dish a little more, a cracked egg can be added. It is cooked briefly in the broth so that it comes out like a soft-boiled egg. The guys behind the counter are friendly and attentive. There is no table service, rather the meal is paid for at the time it is ordered at the counter. After about 7 minutes the guy calls the ticket number for patrons to go back to the counter to retrieve his or her order.
